which cpu O.o?

Performance aint a big issue today. It is purely about features.
those X Intel chipsets are gaming editions. P's are more mainstream or midrange.

The only difference between P35 and P48 is the officially max. FSB support.
P35: max 1333 MHz
P48: max 1600 MHz

So P48s are able to run newer C2D with 1600MHz FSB officially, but certain P35 boards can that too after a Bios update. :P
Overall all of those chipsets are stable and reliable. Some P35 boards tend to have some On/Off issues tho, but nothing very serious.
Oh and there are alrdy some DDR3-only mainboards around, so choose wisely.

Edit:
Like Neph mentioned, the Gigabyte P35-DS3 is a famous mainboard. Good performance, features for that low price. And it's a good overclocker too.

No idea about Nvidia chipsets. :\
