Fried SPAM Oven Roasted Turkey Wontons

Ingredients:
Dipping Sauce:
1/2 cup low sodium soy sauce
3 tablespoons rice wine vinegar
3 tablespoons brown sugar
1 minced scallion
House of Tsang Mongolian Fire Oil to taste

Filling:
1 teaspoon sesame oil
1 12-oz. can SPAM Oven Roasted Turkey, cubed
4 minced scallions
2 cups washed, trimmed and shredded fresh spinach
1 12-oz. package wonton wrappers (approximately 50)
Vegetable oil for frying

Cooking Directions:
Heat sesame oil in nonstick pan. Sauté SPAM and 4 scallions until SPAM begins to brown. Add spinach and cook until wilted. Prepare dipping sauce while SPAM mixture cools. Process cooled SPAM mixture with 2 tablespoons of the dipping sauce in a food processor until fine. Place one rounded teaspoon of the SPAM mixture onto each wonton wrapper. Brush two edges with water and fold crosswise; seal to form a triangle. Garnish dipping sauce with scallion. Heat vegetable oil until very hot and fry wontons in small batches until golden brown. Drain on paper towels and serve with dipping sauce.

SPAMSHROOMS

Ingredients:
36-40 medium fresh mushrooms
3 tablespoons margarine or butter
1/2 cup chopped onion
1/2 cup breadcrumbs
1 12-oz. can SPAM Oven Roasted Turkey, finely chopped
3 tablespoons snipped fresh parsley or parsley flakes
2 tablespoons lime juice
2 teaspoons finely chopped garlic
2 teaspoons dried oregano leaves
Shredded Monterey Jack cheese

Cooking Directions:
Remove stems from mushrooms and finely chop enough to measure 1 to 1-1/2 cups. Hollow out the mushroom caps. Heat margarine or butter in skillet until just bubbly. Sauté the onion and chopped mushroom stems until tender, approximately 2 minutes, or until the onion is translucent. Stir in the remaining ingredients except the cheese and remove from heat. Cool slightly. Spoon this mixture into mushroom caps or shape into small balls and place into each mushroom cap. Place stuffed caps on cookie sheet and bake uncovered at 350° for 10 minutes. Remove from oven and immediately sprinkle cheese on top. If necessary, place under the broiler just long enough to melt the cheese. Serve warm.

Southern Sushi

Ingredients:
1 12-oz. can SPAM Oven Roasted Turkey, diced into strips 1/2" thick by 1-1/2" high
12 large kudzu leaves
1 lb. bacon, broiled to done but not crisp
1 cup grits, cooked as directed on package
6 teaspoons honey
1 medium ripe red tomato, cut into strips
Sage

Cooking Directions:
When picking kudzu leaves, make sure the vine has not been sprayed with chemicals. Wash the leaves thoroughly and boil in salt water for approximately 5-6 minutes. Drain and let cool; then peel apart individual leaves. Using the tip of a sharp knife, remove the tough center stem of each leaf, creating two pieces. With the dull side facing up, coat the entire side of one piece of leaf with honey. Cover the honey by spreading grits over the it, leaving about 1/2" to 1" at each end. Fingers work best for spreading honey and grits. Near the center of each leaf, stack one piece of SPAM, approximately 1/3 of a bacon slice, and a strip of tomato. Sprinkle a dash of sage next to the stack on the grits. Starting with the end of the leaf that is not pointed, wrap the leaf around the stack. Follow by wrapping pointed in over. Stand up and continue with remainder of leaves. Some may need to be trimmed across for appearance. Serve with your favorite condiment, such as horseradish sauce, barbeque sauce or honey mustard sauce.

SPAM Oven Roasted Turkey Pepperball

Ingredients:
2 8-oz. packages cream cheese
1 12-oz. can SPAM Oven Roasted Turkey, finely chopped in a food processor
1 packet of ranch dressing mix
Coarse ground black pepper, to taste
Crackers

Cooking Directions:
Place cream cheese in a large mixing bowl; let stand until softened. Stir in SPAM and dressing mix. Cover bowl and place in refrigerator for 15 minutes or until firm. Spoon onto a serving platter and shape into a ball. Cover the ball with coarse ground black pepper. Cover and refrigerate overnight allowing the flavors to blend together. Serve with crackers.

SPAMTABULOUS Appetizer

Ingredients:
1 12-oz. can SPAM Oven Roasted Turkey
1 large clove of garlic
1-1/2 cup celery
1/4 cup finely chopped green onions including green part
1 cup mayonnaise
1 8-oz. package cream cheese
1/4 cup chicken stock
1 teaspoon lemon juice
1 envelope plain gelatin

Cooking Directions:
Dice SPAM into tiny pieces. Mince garlic. Finely chop celery and onions. Mix mayonnaise and cream cheese until smooth; add lemon juice, mix well. Mix SPAM, garlic, celery, onions and mayonnaise mixture together. Dissolve gelatin in chicken stock. Mix gelatin into SPAM mixture. Pack mixture into a pretty mold to congeal. Serve with crackers, pita, or celery sticks. Even good for sandwiches.

Garden Fajitas

Ingredients:
3/4 cup lemon juice
3 cloves of garlic, minced
1 teaspoon cumin
2 teaspoons oregano
1/2 cup vegetable oil
2 12-oz. cans SPAM Oven Roasted Turkey, julienned
1 small zucchini squash, julienned
1 green bell pepper, julienned
1 red bell pepper, julienned
12 flour tortillas

Cooking Directions:
Combine the garlic, lemon juice, oil, oregano and cumin in a small bowl. Divide this mixture between 2 large resealable plastic bags. Add SPAM to one bag and the vegetables to the other. Refrigerate for 2-4 hours, turning bags occasionally. Drain SPAM and the vegetables, discarding the marinade. In a large skillet, sauté SPAM for 5 minutes; remove from skillet and keep warm. Add the vegetables and sauté for 6-7 minutes until tender crisp; drain. Spoon SPAM and vegetables over tortillas and fold in sides. Serve immediately. 12 servings.

SPAM Oven Roasted Turkey Gobblers with Cranberry-Orange Dipping Sauce

Ingredients:
1/3 cup very finely chopped celery
1/3 cup very finely chopped onion
1 14-oz. can chicken or turkey broth
1 12-oz. can SPAM Oven Roasted Turkey, chopped fine
2 cups bread crumbs
1 tablespoon poultry seasoning
1/2 teaspoon ground black pepper

Cranberry-Orange Dipping Sauce:
1 cup jellied cranberry sauce
3 tablespoons frozen concentrated orange juice
1 tablespoon honey

Cooking Directions:
Preheat over to 350°. Bring celery, onion and broth to a boil in a small saucepan. Boil for one minute. In a large bowl, combine SPAM, bread crumbs, broth, poultry seasoning and pepper. Stir until well mixed. With a cookie scoop, or a tablespoon, drop 1" balls of mixture onto a lightly greased cookie sheet. Bake for 10-12 minutes until browned. Serve warm with dipping sauce. To make dipping sauce, in a small saucepan over low heat, stir cranberry sauce, orange juice and honey until well blended and warm.

SPAM Oven Roasted Turkey & Dressing Croquettes

Ingredients:
1 12-oz. can SPAM Oven Roasted Turkey, minced
1 box turkey flavored stuffing mix, prepared as directed
1/2 cup diced cooked carrots
1/2 cup diced onions
1 cup diced mushrooms
1 egg
2 slices white bread, cubed
4 tablespoons butter
1 cup flour
Seasoning to taste

Cooking Directions:
Place the minced SPAM in large mixing bowl and add the prepared stuffing; mix well and set aside. In a skillet, melt 2 tablespoons of butter. Add the carrots, onion and mushrooms. Sauté until tender. Remove with slotted spoon and add to SPAM mixture. Add 1 egg and the bread to the mixture. Mix well with a fork. Place one cup of flour in a shallow dish. Add seasoning to taste. Set aside. Form stuffing mixture into patties. Dredge the patties in the seasoned flour and place on a plate. In the same skillet used to sauté the vegetables, add the remaining butter and melt over medium high heat. Add the patties to the skillet and cook until golden brown, about 10 minutes. Makes 6-8 croquettes.

SPAM Oven Roasted Turkey Pot Pie

Ingredients:
1 12-oz. can SPAM Oven Roasted Turkey, chopped fine
1 15-oz. can mixed vegetables
1 10-3/4 oz. can cream of mushroom soup
1 cup finely shredded Colby Monterey Jack cheese
1 cup French fried onions
1 12-oz. tube of biscuits

Cooking Directions:
Place chopped SPAM in mixing bowl. Mix in the vegetables, soup, 1/2 cup of the cheese and 1/2 cup of onions; mix well. Pour into 8x8" square cookware. Place biscuits on top. Top with the remaining onions and cheese. Bake at 375° for 30 minutes.
